For the chocolate mousse with aquafaba, first coarsely chop the chocolate. Melt with milk and salt over a bain-marie and allow to cool slightly.

Briefly whisk the aquafaba with the baking powder until frothy. Then continue beating with the mixer (or food processor) for about 5 minutes at medium speed. Continue mixing at a higher speed for at least 5 minutes – the mixture should look like stiff beaten egg whites. Gradually add the sugar and continue to mix until the sugar is completely dissolved.

Temper the chocolate. That is, first mix a little snow with the chocolate and only then add the chocolate to the rest of the snow and mix gently.

Portion the chocolate mousse with aquafaba either glasses or bowls, or leave in a larger bowl and cut out dumplings before serving. Refrigerate for at least 7 hours (preferably overnight).
