Flour and salt in a wide shape. Form a bulge into which stir in the eggs and gradually water. Prepare everything into a tough dough. In a saucepan, boil water with a little salt. Place the dumpling dough on a damp board and scrape 2cm long strips into the boiling water with a damp kitchen knife or use a spƤtzl grater. Skim the dumplings, as soon as they float to the top in the boiling water, rinse well with cold water. Before serving, fry the dumplings briefly in a frying pan with melted lard.
