Instructions:

At the beginning, cut the vanilla pod in half and remove the pulp. Then whisk the pulp with the sugar, eggs, milk, marzipan, amaretto and lemon zest.

Halve the old rolls and cut them into small strips. Cut the apples into quarters, remove the cores, cut into thin slices and mix with the rolls. Now grease a suitable baking dish (or gratin dish), dust with flour and fill with the bread-apple mixture.

Pour milk over everything, sprinkle with almond flakes and let it sit for ten minutes. Bake in a heated oven at 160 °C for 20 minutes.

For the vanilla sauce, whisk the yolks with the sugar and vanilla pulp until creamy. Bring the milk to the boil and add to the egg yolks form while stirring. If the sauce has not thickened, continue to heat while stirring until just below boiling point and then transfer. If the sauce boils, it will turn to sweet egg yolks, avoid at all costs! Decorate the finished Schlupfer with the Easter bunnies and quickly bring to the table with the vanilla sauce. If you like you can add a little cold apple compote and mint.

Tip: Do you prefer milk chocolate or dark chocolate? Depending on the case, use what tastes better to you.
