Instructions:

For the chocolate mousse with citrus fruits and nut pillows, melt the chocolate. Beat egg yolks and powdered sugar over steam until the mixture becomes whitish.

Add melted chocolate, coffee liqueur, crushed cardamom pods and vanilla. Whip the cream and stir it into the mixture. Pour into a glass and chill the mousse in the refrigerator.

Roll out the puff pastry and cut into square or round pieces. Slightly score, brush with the egg and sprinkle with the chopped nuts. Bake in the oven at 170°C top and bottom heat for about 15 minutes.

Peel the fruit (cut away the white skin) and cut out the flesh (small wedges). Mix with honey, mint leaves and hazelnut oil.

Just before serving, arrange the fruits on the chocolate mousse and place the puff pastry pillows on top.

Then serve the chocolate mousse with citrus and nut pillows immediately.
