For the olive salad, first mix the lemon juice and oil. Put the olives, onions and parsley in a suitable bowl. Add the lemon and oil mixture and mix well. Season with salt.

The olive salad can be served on the spot or prepared up to 6 hours in advance. To do so, keep refrigerated and covered. Bring to the table at room temperature.
