Soup is prepared from the bones and soup vegetables. Cleaned and cut celery is steamed in butter and in a covered saucepan until soft. Sprinkle flour on it, brown it and add strained bone broth and milk. Season with salt and pepper and cook until soft. It is strained through a sieve. The egg yolks are mixed with sweet whipped cream, a little soup is added and beaten with a whisk. The rest of the soup is added while whisking continuously. After adding the sweet whipped cream with egg yolks, do not boil the soup. Breadcrumbs are served as a soup garnish.
