For the fake fried eggs, first provide shallow dessert dishes. Squeeze half the lemon. Cut the vanilla bean lengthwise and scrape out the pulp with a spoon.

Whip the cream until stiff. Remove the peaches from the can, drain well and cut in half.

In a bowl, mix the curd, sugar, vanilla pulp and lemon juice until creamy and carefully fold in the whipped cream.

Pour the cream into the dessert bowls as “egg whites” and spread flat, placing a peach half on each as a “yolk”.

Serve the fake fried eggs.
