In a mortar, crush half of the coriander seeds.

The whole and crushed coriander seeds in a bottle form and pour through a filter to the top with olive oil.

Infuse for at least 14 days so that the oil absorbs the delicate coriander flavor well.

Use this aromatic oil with grilled fish or for a salad dressing or on potatoes. Keep in a place protected from light.
