For the bread horseradish, cut the bread into thin slices, put them in a pot and pour hot beef broth so that a thick paste is formed. Season with pepper, nutmeg and salt and bring to the boil.

Stir the mixture well, remove from heat, mix cream with flour and stir into the bread mixture. Tear fresh horseradish, stir in and bring to a boil again.

Remove the saucepan from the heat and add the egg yolk.
