For the bread soup, first cut the bread into pieces and soak in water. In the meantime, trim the vegetables and cut them into small pieces. Heat some clarified butter in a saucepan and, starting with the onion, gradually sauté the vegetables in it.

Add 1 tablespoon of homemade soup seasoning. Squeeze the bread cubes well and roast them briefly as well. Now add plenty of water and season with salt, pepper, dried lovage, oregano and curry.

Let it boil down until the vegetables are firm to the bite. Pour in a large dollop of whipping cream and use a masher to crush the large pieces of bread a bit.

Finally, stir in a beaten whole egg and season with the chopped herbs.
