For the sourdough, mix well 100 g rye flour and 100 ml lukewarm water. Cover and let stand overnight at room temperature.

Stir 100 g flour and 100 ml lukewarm water into this dough mixture again on each of the following 3 days.

On the fourth day, the homemade sourdough is ready.
