For the Cumberland sauce, dice the onion. Peel the orange, cut the peel into very small cubes. Then squeeze the orange.

Bring the orange juice and wine to the boil together with the onion cubes and the orange peel pieces, add the currant and sugar.

After 5 minutes, remove from heat and mix in the horseradish, season with salt.
