For the Tête de Moine cheese salad, cut sugar snap peas into narrow strips and then blanch briefly in salted water, drain.

Quarter the cherry tomatoes, slice the peaches thinly. Pluck oak leaf lettuce, cut basil into strips.

Stir Steirerkraft pumpkin seed oil, chopped pumpkin seeds, balsamic vinegar, mustard, pepper and honey. Add the basil.

Arrange all ingredients nicely on a platter and drizzle with the vinaigrette.

Save some cheese florets and use them to decorate the cheese salad.
