A more wonderful asparagus recipe:
Peel asparagus spears, cut ends into small pieces and cook in boiling salted water with sugar for 15-20 min. Remove asparagus spears and drain. Toast bread, spread with butter and place in a large shallow gratin dish or on heat-resistant plates. Place ham and asparagus spears on top. Spread hollandaise sauce evenly over topped bread. Bake in a heated oven at 225 degrees for about 8 minutes or under the broiler for 2-4 minutes. Cut the cress into small pieces, rinse, rub dry and garnish the toast with it.
Tip: Mandarin oranges or pineapple chunks also go well with this.
You can also refine the hollandaise sauce with a little grated cheese.
