Remove the Prague ham from the net, pepper it and place it in a gratin dish or sauté pan. Put it into the preheated oven at 175 °C. Pork rind on top. Add some apple juice. Sizzle, repeatedly filling up with apple juice. After 2 and a quarter hours, add the cored and quenched apples and the peeled and halved shallots. Also add the honey and thyme sprigs. If you do not have thyme sprigs, add 2 tablespoons of dried thyme.

Add dried thyme. Stew for another 3/4 hours. After a total of 3 hours, remove the roast from the oven and cut into slices, slices can (should) be cut in half again, otherwise the portions will be too large. Season the sauce with salt and freshly ground pepper. Sauce over meat and puree form.

Serve with parsley root/mashed potatoes. Is equally enjoyable as a menu accompaniment.
