In a baking bowl, beat 2 eggs with 120 g sugar until hearty. gradually add melted, cooled butter and sifted flour, stirring throughout.

Butter a cake springform pan and dust lightly with flour. Pour in the dough and bake for about half an hour at 180 degrees (gas mark 6). Use a kitchen knife to make a cooking test: The kitchen knife must remain clean after piercing. Peel the apples, remove the core and cut them into quarters. Then cook in 3 dl water and 50 g sugar until they give way under finger pressure. Drain. Whip 3 egg whites with the remaining sugar until stiff.

Cover the baked cake base with the apples, top with the whipped cream and sprinkle with the almond flakes. Cook at 90 °C (gas mark 3) until the snow turns a light color.

Use crisp apples that do not soften too quickly during baking.
