For the syrup, the day before, liquefy the sugar in boiling hot water. Remove from the heat, pour in the dried apricots and leave to soak for one night.

Preheat the stove to 210 degrees (gas mark 7). Lightly butter the baking dish. Spread apricots evenly. Set aside. In a baking bowl, using a hand mixer, beat the eggs with the sugar and vanilla sugar until white and creamy. gradually add the milk and flour all at once. Mix well.

Cover the apricots with the batter and bake the cake for 30 minutes on medium high.

This fruit cake is served lukewarm. You can also use raisins, dried plums or dried apples instead of apricots.
