Mix the minced beef with the egg white in detail. Cut the vegetables into fine cubes and add to the consommeansatz form.
Season with salt and herbs. Fill up the mixture with the beef broth and let it bubble up while stirring continuously. Skim off any rising turbidity with a ladle. Keep the consomme at a simmer for about 2 hours, then strain.
