Select the spinach, removing the hard stems. Rinse the spinach leaves and cook with the drained water in a saucepan at high temperature for 2 minutes. Drain the spinach well, chop it coarsely, season it with salt, pepper and nutmeg and cool it in a saucepan.

Cut the bacon into small cubes. Heat the butter in a frying pan and fry the bacon cubes in it over medium heat until golden brown, then keep warm.

In a large saucepan, bring enough salted water to the boil. 4.

Stir the eggs into the cooled spinach and quickly add the flour to make a smooth dough. Use a teaspoon to form dumplings and place them in the boiling salted water in batches. Reduce the temperature and cook the dumplings for about 10 minutes. The spinach gnocchi are cooked when they come to the surface again. 5.

Drain the dumplings, add them to the bacon cubes and cook for 5 minutes. Sprinkle the spinach gnocchi with the grated cheese and bring to the table.
