Instructions:

Remove the stem from the zucchini. Slice lengthwise with a vegetable slicer or peeler. Place in a steamer basket and steam for two minutes. Cool slightly.

Cut the olives into quarters.

For the glaze, pour the milk into a tall container. Beat the eggs and add the feta in pieces. Blend. Season with herb salt and enough pepper to taste.

Grease a baking dish with a thin layer of butter. Place two or three different colored zucchini slices on top of each other and roll them up. Place the rolls upright in the dish. Spread the glaze evenly over them and add the olives. Place in the middle of the oven at 180 degrees and bake for thirty-five to forty minutes.

It goes well with home-grown potatoes, fried in a little olive oil in a frying pan or on the stove. Not absolutely necessary, but quite suitable: grilled lamb or beef.

As a variation, the zucchini snails can be sprinkled with coarsely chopped walnuts or diced tomatoes instead of olives.

Our tip: Zucchini are tender in taste and therefore also suitable for children.
