Cut 4 wedges from the lemon for the garnish. Squeeze the rest of this and the other lemons. Mix the juice with the remaining ingredients for the dip until the sugar is completely dissolved.

Place rice dough sheets in lukewarm water for 30-40 seconds, then spread out on a flat surface. Starting from the center on the bottom half of the dough, place the wild garlic leaves vertically. Place cucumbers, herb mushrooms and dried tomatoes horizontally, mint vertically on top. Gently fold in left and right sides, then roll in half vertically with tension. Incorporate chive stalks on one side and finish rolling up.

Put wild garlic leaves on a plate, place the rolls on top and serve with dip, lemon wedges and sprouts.
