Carefully remove the seeds from the chili pepper. Pluck the cherries from the stems, rinse, remove the stones.

Melt the powdered sugar over low heat, add the port wine, put in the chili pepper. Meanwhile, gently simmer until a thick syrup is formed, remove the chili, add the cherries, simmer on low heat for about 1 minute, remove from the heat and leave to cool. Before serving, turn cherries over again in their broth to the other side.
