For the plum cake, separate the eggs and beat the egg whites until stiff. Beat the yolks, powdered sugar and soft butter until creamy.

Stir in flour and baking powder until well blended, then carefully fold in snow. Spread the dough on a baking tray, stone the plums and cut them in half.

Spread the plums densely on the dough and bake the plum cake in the oven at 180 °C top/bottom heat for about 40 minutes.
