For the spicy ham strudel, soak the rolls in water and squeeze them. Cut the ham into small cubes and mix with the sausage meat and the squeezed out rolls.
Fold in whipped cream, breadcrumbs, eggs, Emmentaler and parsley and season with salt and nutmeg. Roll out the puff pastry.
Spread the filling on the puff pastry and carefully roll up the pastry. Brush the outside with egg yolk and bake at 180°C for about 35 minutes.
Cut the spicy ham strudel into slices and serve immediately.
