For the soft cakes, cream together lukewarm butter, powdered sugar and orange zest, then gradually beat in egg yolks and egg. Fold in the flour and fill the mixture into a piping bag.

Line a baking tray with baking paper and pipe small doughnuts (keep your distance, they will spread a bit!). Bake in the preheated oven at 180 °C for about 10 minutes until light brown.

Finely mince aranzini and mix with apricot jam until smooth. Coat the doughnuts with it. Melt chocolate with fat, stir until smooth and coat the soft cakes with it.
