Especially appetizing look round poor knights. So if you like, cut out round slices from the bread. Instead of brioche can be used just as sweet yeast bread, for example, mare. Mix milk with vanilla sugar and bathe the bread in it until it is soaked. Then turn the slices from both sides in the beaten egg to the other side. Fry in hot butter until brown on both sides. Sprinkle with powdered sugar.

Prepare clarified butter Tip: Use clarified butter, which hardly splatters during frying and can be heated much higher due to the lower water content. Here’s how: melt 250 grams of butter in a relatively small saucepan over medium heat. Then wait until it begins to simmer slightly. During this, a milky foam, milk-egg white rises to the top. Skim it off with a spoon until nothing rises. Then remove the saucepan from the stove and let it stand quietly for about ten minutes until the remaining egg white has settled to the bottom.

Carefully pour this clarified butter through a sieve into a clean screw-top jar, but in such a way that none of the egg white comes with it. Cool. It will then set in the refrigerator. There, the clarified butter will keep for at least four weeks – or even longer.
