Salt and pepper the cutlets, turn them in a little flour.
Grind cheese, crustless bread, kitchen herbs and peeled garlic in a blender, season with salt and pepper.
Fry the cutlets in the heated oil for 2 minutes on each side.
Spread the spice mixture evenly on top, roast for another 4 minutes, basting a few times with drippings.
Drain the cutlets briefly on paper towels and serve.
