For the Keta caviar on daikon puree, arrange the washed, drained lettuce leaves on 4 plates. Grate the radish with a fine grater and rinse in cold water. Drain well in a colander and divide among 4 plates. Mix the keta caviar with soy sauce and arrange on top of the daikon puree. Place the grated ginger on top and drizzle with a little lemon juice. Serve with wasabi horseradish if desired.
