For the butter cutlets, pour the warm milk over the bread cubes, mix and let sit for about 15 minutes. Preheat the oven to 50 degrees.

Mix minced meat with bread cubes, egg and cream, season with salt, pepper and nutmeg (freshly grated).

Form four oval loaves of the same size from the mixture, if necessary press a grid pattern into the surface with the back of a knife. Heat a little oil in a frying pan.

Fry the loaves on a low flame on both sides (takes a total of 8 minutes), remove from the frying pan and keep warm in the preheated oven.

Pour off the fat, deglaze with the juices and bring to the boil. Thicken sauce by stirring in pieces of butter (do not boil sauce anymore).

Serve the buttered escalopes with the sauce and mashed potatoes.
