For the quinoa loaf, wash quinoa and steam in salted water on low heat until soft – please follow the package instructions, takes about 15-20 minutes.

Peel and finely chop onion and garlic. Sauté in olive oil.

Coarsely chop dried tomatoes and olives. Strain beans. Grate goat cheese.

Mix cooked quinoa with the tomatoes, olives, sauteed onion, garlic, beans, cheese and the egg. Season with salt, pepper and chopped fresh oregano.

Mash some of the beans with a fork. Form the mixture into patties and fry them in plenty of olive oil.

Attention: do not turn too early, so that the quinoa loaves do not fall apart!
