Cut pike fillet into cubes and freeze a little bit in the freezer. Put meat in cutter, for this cold salt, whipping cream, pepper and nutmeg. Rotate in cutter until a loose, smooth quantity is obtained.

Pass this quantity through a sieve and cut as before. Carefully mix in the autumn trumpets and chopped parsley. Cut out gnocchi and poach in hot salted water garnished with a studded onion for 15 minutes.

Sauce

Sauté the onion in butter. Sprinkle with flour, add nutmeg, mix well and add whipped cream and white wine. Before serving, fold in the finely chopped wild garlic. Spaghetti is served with this dish.
