For the crème brûlée orange, boil orange peel with Cointreau and strain. Mix with the other ingredients and set in a bain-marie at about 110 °C, covered with cling film, then let cool for 2 hours.

Sprinkle with brown sugar and flame with a burner (blowtorch).
