For the potato salad with spring onions cooked potatoes cold quench and peel, cool and then cut into thin slices.

Cut the onion into cubes, wash and clean the spring onion and cut into pieces. Mix a marinade of soup, vinegar and oil with salt and pepper and mix potato slices with marinade, onion and about half of the spring onions and season to taste.

Put in a salad bowl, cut decorations from the peppers. Sprinkle the potato salad with spring onions and decorate with the cherry tomatoes.
