For the cinnamon stars, beat egg whites with a pinch of salt until stiff, gradually add powdered sugar and finish beating with a dash of lemon juice until stiff.
Set aside 1/4 of the beaten egg whites for the glaze. Mix with the nuts, cinnamon and vanilla sugar and let rest for an hour. Preheat oven to 170°C hot air.
Roll out dough on dusting sugar layer to about 2 cm and cut out stars. Brush with glaze and bake for about 15 minutes. The pastry should still feel a little soft on the underside when you take it out. Let the cinnamon stars cool down.
