For the semolina pudding, boil the semolina with the milk and a pinch of salt until thick.

Rub butter, sugar and egg yolks, mix in the cooled semolina porridge. Add some finely chopped lemon peel.

Beat the beaten egg whites of the two egg whites until stiff and fold into the mixture. Pour into a baking dish.

Bake the semolina casserole at 180°C for about 1/2 hour.
