Fromage fort is ideal to use up stale baguettes (even those from the freezer). The bread becomes crispy one more time in the kitchen stove. Therefore, it is not worth using fresh baguette.

Grate the cheese very finely. Clean the white from the leek, chop it very finely and boil it in the water until it becomes soft and mix it with the cheese. Add the white wine little by little until you get a firm but still creamy quantity. Season with salt and pepper. Cut the baguette into slices, spread with the mixture and bake in the heated oven at 250 °C for about 5 minutes until golden brown. You can also brown the baguette slices under the oven grill. Serve with a dry white wine from Beaujolais.
