Peel mangoes and cut into small cubes. Wash papayas well, cut in half, remove seeds and wash out the pips. Carefully scoop out the flesh from the papaya with a corer, being careful not to damage the peel as this will be used for serving. Place the mango cubes and papaya in a bowl. Chop the cilantro leaves, including the stems, and add them. Crush the roasted peanuts together with chili, lime juice and fish sauce in a mortar. Mix into the fruit. Chop the anchovy into small pieces, mix in as well and mix everything well again. Pour into the papaya shells (or small bowls) and serve.
