Syrup: Bring sugar and water to a boil while stirring, simmer on low heat for five minutes. Remove from heat, add sake and star anise, cool.

Remove peel from lychees, working over a plate to catch juice. Mix with syrup and refrigerate with lid on for 4 hours.
