For the anti-hangover tortilla, peel the onion and cut into small cubes. Wash the bell bell pepper, dry it, cut it into quarters, removing seeds and membranes. Cut peppers into thin strips.

Roughly dice or cut salmon into strips, finely chop parsley. Cut open the chili pepper, remove the seeds and chop finely.

Beat the eggs and mix with the remaining ingredients. Season with salt and pepper.

Pour the mixture into an oven-proof pan and let it set on the stove for 1-2 minutes, stirring occasionally. Then bake in the preheated oven at 180 °C for about 15 minutes until done.

Drizzle the anti-hangover tortilla with a little olive oil and serve immediately in the pan.
