Asparagus Lattice in Vacherin Foam

Cut asparagus fresh at the bottom. If necessary, peel off the lower third. Dice the cheese.

Bring water to a boil. Season lightly with salt and cook the asparagus for eight to ten minutes until crisp. Rinse with cold water and drain on a kitchen towel. Cut off some asparagus tips for the garnish.

In a cold-floured frying pan, stir together cream and flour until smooth and bubble. Stir in cheese cubes, stirring occasionally, until melted. Cool.

Brush a square baking dish with oil. Arrange the asparagus in layers in a grid pattern, starting with the ones without tips.

Whip the egg whites until very stiff. Carefully fold into the cheese mixture and mold it over the asparagus. Place in the middle of the 200 o hot oven and bake for twenty minutes.

Garnish with asparagus tips and serve on the spot.

It goes well with raw fried potato slices or pasta. But also fresh smoked bread and raw or Parma ham.

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
