For the Indian lentil vegetables with rice, steam the rice as usual in lightly salted water. Heat the oil in a large frying pan or wok.

Sauté the onions and garlic, add the lentils and sauté briefly.

Slice or dice the carrot and zucchini and add one by one. Briefly fry the curry powder and add 2 cups of water.

Add salt and cook covered for about 4-5 minutes until the lentils are soft.

In the meantime, slice the cucumber and arrange on a warm plate with the rice and lentil vegetables.

Pour the yogurt on top and sprinkle with the pumpkin seeds. Serve the Indian lentil vegetables with rice.
