Rinse watercress properly, leave in salted water for 10 min, then rinse and drain.

Arrange on a plate with the salmon. Grate apple, mix with horseradish, juice of one lemon and chopped shallot under the kefir, season sauce with pepper and spread evenly over the leaf salad.

Serve with baguette or toast.
