Instructions:

Remove the skin from the pears, leaving the stalk attached. Immediately sprinkle with lime juice. Melt sugar and saffron in a small amount of water in a wide saucepan. Bring to a simmer for 1-2 minutes.

Rinse 1 orange hot, pat dry, peel thinly and cut off. Squeeze both oranges. Add everything with wine and pears to saffron syrup form and simmer with lid closed for about 10 min. until pears are soft but not falling apart, sprinkling often with the gravy. Serve in the roasting juices.
