Heat oil. Add onion and curry paste, stir-fry for 3 min. until soft. Add coconut milk and water, bring to a boil, reduce temperature and simmer gently without lid for about 5 min. Add sweet potato, do 6 min. Now add melanzani and lime leaves, stir to soften for 10 min. Add fish sauce, lime juice and zest and sugar, sprinkle with cilantro leaves.
