Remove the peel from the potatoes and boil until soft, then mash with some of the whipping cream, salt and nutmeg to form a firm dough. Form the dough into small balls, turn them in egg yolk, breadcrumbs and sliced almonds on the other side. Fry the almond balls until golden brown all around.
