Boil the potatoes. In the meantime, wash the basil and arugula and mash with lemon juice, olive oil, sour cream and a pinch of salt to a fine cream.

Peel the potatoes, cut them coarsely and mash them finely with a masher.

Add the basil-arugula cream and season the mashed potatoes with salt to taste.
