Instructions:

Add the sweet must and mix everything together until smooth. Add the egg yolks and the melted butter. Let the dough rise at room temperature for at least fifteen minutes.

In the meantime, peel the apples, but leave them whole. Cut out the core exactly. Then cut the fruit into slices 1_cm thick. Immediately turn them to the other side in the juice of a lemon to prevent them from turning brown.

Immediately before preparing, whip the egg whites with the baking powder until stiff. Fold the beaten egg whites into the dough.

Heat plenty of oil or soaked butter in a frying pan or deep fryer to 180 °C.

Pull the apple slices in portions through the dough and shape them on the spot in the hot oil. Bake until golden brown on both sides. Drain on kitchen roll.

Keep warm, uncovered, in the 100 °C hot stove until all the cakes are baked.

Sprinkle the apple cakes with cinnamon sugar. If desired, serve with vanilla sauce or vanilla ice cream.

Tip: Instead of clarified butter, you can also use butter in most cases.
