For the baked onion baguettes, first preheat the oven to 200 °C.

Then cut the baguettes in half lengthwise and place them on a baking tray lined with baking paper.

Now peel and finely dice the shallots and sauté in a little butter until translucent. Also dice the bacon and add to the shallots.

When the shallots are translucent, remove the pan from the heat and set aside.

Now mix the eggs together with the crème fraiche and cheese and add the onion and bacon mixture. Season the mixture with salt, pepper and herbs and spread it on the baguette halves.

Bake the onion baguettes for 10 minutes and enjoy hot.
