Cut croissants in half lengthwise with a serrated knife and place a lettuce heart on the bottom of each. Stir the eggs with salt and pepper and fold in the whipped cream.

Heat clarified butter in a frying pan and fry the bacon and mushroom cubes in it. Season with salt and pepper. Now add the egg mixture and stir in the chives. Pour the egg mixture on the lettuce hearts form and top with ham. Place the top half of the croissants on the egg mixture and bring to the table on the spot.
