Bring the milk to the boil with the slit vanilla pods and the scraped out pulp. Meanwhile, beat egg yolks and egg with sugar in 5 min until creamy. Pour the hot vanilla milk through a sieve directly into the egg mixture and stir. Stir in saucepan over medium heat with whisk until cream is thick. Pour through a sieve and set aside to cool until ready to serve.
